Over the past few months I’ve been experimenting with different recipes for my slow cooker and my favourite one is for a delicious taco filling.
Using Salsa, Cilantro, Chicken and a few other ingredients you can make a delicious taco filling over night or while you work. The meat is extremely tender and you can easily shred it with a fork. All that’s needed once this is done are shells, and other taco condiments.
Ingredients:
- One 24-ounce jar salsa
- Juice from one lime
- 1/4 cup fresh cilantro
- One 1.25-oz. package taco seasoning (i make my own with some cumin, smoked paprika, salt & chilli)
- 2 jalapeno peppers, finely chopped (remove seeds to adjust heat level)
- 1/4 cup of Green Peppers, chopped
- Black Pepper to taste
- 4 chicken breasts
Directions:
- Chop cilantro
- Chop jalapeno peppers
- Chop green peppers
- Juice Lime
- Add ingredients to slow cooker
Cook on low for 6 hours. Shred with fork.
