All of the measurements and timings are approximations and you should experiment with it accordingly.

Recipe (Serves approximately 8):

  • 500g of lean ground beef
  • 250g of ground pork
  • 250g of venison
  • 1 can of Tomato sauce (680ml, 22 fl. oz.)
  • 2 cans of Tomato paste (156ml, 5.5 fl. oz.)
  • water (approximately 340ml)
  • 1 large green pepper (diced)
  • 1 medium white onion (diced)
  • pinch of rosemary
  • 2 tbsp italian mix
  • 1 tsp of oregano
  • 3 cloves of garlic
  • lots of salt and pepper

Directions:

  1. Brown the meat.
  2. Dice vegetables as the meat is browning
  3. Put onions in with meat
  4. Add sauce, paste, water, garlic and spices into the pot. Simmer for 10 minutes
  5. Add green peppers into the pot.
  6. Simmer for 45 minutes (or more), stirring occasionally

I’ve found this recipe really improves canned tomato sauce and while it isn’t as good as creating a sauce from scratch it still tastes great. Simmering it for a long period of time allows for all the spices to meld with the sauce and meat. This sauce goes well over your favourite pasta or on a nice toasted baguette.

Using Salsa, Cilantro, Chicken and a few other ingredients you can make a delicious taco filling over night or while you work. The meat is extremely tender and you can easily shred it with a fork. All that’s needed once this is done are shells, and other taco condiments.

Ingredients:

  • One 24-ounce jar salsa
  • Juice from one lime
  • 1/4 cup fresh cilantro
  • One 1.25-oz. package taco seasoning (i make my own with some cumin, smoked paprika, salt & chilli)
  • 2 jalapeno peppers, finely chopped (remove seeds to adjust heat level)
  • 1/4 cup of Green Peppers, chopped
  • Black Pepper to taste
  • 4 chicken breasts

Directions:

  • Chop cilantro
  • Chop jalapeno peppers
  • Chop green peppers
  • Juice Lime
  • Add ingredients to slow cooker

Cook on low for 6 hours. Shred with fork.

The lunch was delicious and consisted of chicken marinated in a mango-pepper sauce, salmon with a sesame glaze, fresh grilled peppers, zucchini, onions and peppers, a wild rice and a salad.

I wasn’t expecting much from a free meal but the Hilton really delivered. Everything was cooked properly and tasted very fresh and delicious.
